Coconut Shrimp!

Last Saturday we bought a pound of wild shrimp at the farmer's market, thinking that we'd have lots of opportunities to cook them.  But, with all of the birthday celebrations, we just haven't had time.  This afternoon I decided that the shrimp needed to be cooked TODAY, so I went searching for an easy shrimp recipe.  And I found a great one!  This was a perfect way to add extra fat (fuel) to such a low fat/low calorie meat.  Coconut shrimp and roasted asparagus, yum!
